Friday: Did laundry. Lazy day. Went to the 7-11 for some ice cream. Watched fireworks out the window. Reassured kitties that everything was OK.
Saturday: Made pickled eggs using something similar to this recipe:
12 hard boiled eggs, peeled (make that 7)
1 T salt
1 1/2 C cider vinegar (make that 1C cider v. + 1/2 C wine v.)
1/2 C water
1 1/2 tsp. sugar
1 tsp. white peppercorns, crushed (make that 1 tsp crushed + 1 tsp whole black pepper)
1/2 tsp. crushed allspice (make that 1 tsp pickling spice)
1/2 tsp. ground turmeric (skipped)
1/4 tsp. celery seeds (skipped)
2 shallots, thinly sliced (skipped)
Take a fork and gently pierce each egg through the white to the yolk about 6 times, but leaving the whole egg intact. Pack the eggs into a clean 1 quart jar. (make that a tupperware)
Combine the remaining ingredients in a non-reactive saucepan and bring to a boil. Reduce heat, cover and simmer for about 15 minutes. Let liquid cool for about 10-15 minutes. (make that cool for about 2 min)
Pour liquid over eggs in jar, tightly cap jar and refrigerate. It will take about a week for the eggs to absorb the flavorings and they will keep, refrigerated, for several weeks.
Also went to pick up Thai food. Had the Sauteed Rock Cod with ginger (hold the mushrooms) — that was pretty good.
I spent some time retraining my spamassassin installation and pulling some statistics.
A problem involving News was happening at the Sacramento site… I thought they were dealing with it but it didn’t seem to get fixed. Finally called their on-call person at 10:30 pm and they were able to fix.
Sunday: More laziness planned for today. Though I went shopping for a metric assload of food (one-third of which is still in the trunk). Had some good plums. Also, some crackhead keeps lighting cherry bombs or something in his backyard.
